John Butler?

If you're doing Newton Faulkner style, he often adapts rock/pop songs into acoustic.

Try some Pete Murry or John Butler trio!

I'd have to suggest "Feeler"-Pete Murry!

Dude I got these strings the other day that couldn't be tuned to higher than 4 octaves below middle C then I realized that they were shoelaces and they weren't making any sound at all.

Try some Eagles. They have a lot of acoustic songs e.g. "Best of My Love," "Take it Easy"...

I want a Jack Johnson version of this...

He couldn't play it if he had three hands

Fine, I want to hear Opeth play this on Jack Johnson's acoustic with Johnson just on vocals. It would be bloody hilarious.

Nirvana had an entire album of acoustic covers, from themselves and other bands. It's called "Unplugged in New York." It's really a great album.
