Let's say I am playing a solo using A minor Pent. over an Am chord. If the chord switches from Am to Em, do I need to switch to E minor pent. scale?

Or could I use the A minor pent scale even when the chords switch?

In the key of A minor, E minor occurs naturally anyway (v) so you can use the A minor scale over that if you wish.
