neither is better, rosewood will give you a slightly warmer tone, while maple and ebony are much harder woods, and will give you more brightness and snap.

Brazilian Rosewood = endangered so if you have a fretboard made out of that, your guitar is pure win.

I enjoy both Maple and Rosewood. I have an MIA strat with maple, and I am getting either a Classic series 60's with rosewood, or a Gibson LP Classic, which might be Ebony I forgot.
