Is there anyway to adjust these (where the arrow points in the pic) without taking off a string?

P.S. Bonus points for naming these things?

screwdriver, the strings are durable, they'll just bend out of the way. I've done it b4.

Just make sure you don't tighten it too much. I did this on my Strat a while ago and nothing went wrong.

It's not the place with the screws. It's like a screw with no head to put the screwdriver, and it adjusts the height.

You mean the 2 "screw" things that raise the height of the saddle?
You might be able to adjust it with your fingers or get a really small allen wrench.

you mean an allen key (a.k.a. hex key)? It should be fine to adjust the height with the strings on, but detune a bit first, because it will affect the string tension. Once you're set up, retune and you're good!
