250 will have more crunch and controllability
500 will be cleaner and move from min to max quicker

it depends on what guitar you have. Generally 250's are used in single coil guitars, and 500 in humbuckers

500k is slightly brighter. 1M even more so.

No.

You're confusing it with taper, and something else, unrelated to pots.

The 250s are used with single coils to cut some of the highs. 500k with humbuckers to keep the highs. But most of the guitar I have taken apart single and humbucker have had 500k. Just cheaper for companies to stock one kind. The audio/linear taper will change the way the volume/tone goes up and down. Some dont care but if I can I like audio for volume and linear for tone.
