i am considering buying a carvin bolt kit.

these come with a maple neck and ebony fretboard

the standard body is alder
i could have it upgraded to swamp ash or mahogany

what do you guys think would be the best sounding (versatile but mainly for metalcore) and look the best (it will be a natural finish possibly stained)

I'd go with mahogany. Darker tone wood to compliment high gain trebly humbuckers for metal

Ibanez S370 (all custom)
Mesa Boogie Studio Pre
Fender Champ 25se (used to power Mesa pre)
Custom 2x12 cab w/ Eminence Texas Heats
I say mahogany as well. it sounds amazing and looks awesome too
