It's scooped mids. It means that they are lowered. So the sound is mainly made up of bass and treble. The mids have been 'scooped' out.

its when your bass and treble are high but your mids are low, so it looks like a giant U sort of, like a scoop

Scooped mids gives you a more "Metal" sound
Some times thought to stand out in the mix ts important not to scoop them too much or your guitar will sound too brittle in the mix.
