Today when I was playing, I realized the 500T has way too much output, I would like a more defined sound... ideas?

It's debatable how much difference it's going to make, but the Duncan Custom 5 might be worth looking at. Can you be a bit more specific about what you want to change about the tone, the 500T has a ceramic magnet so I'd have thought it was pretty well defined already.

Also:
Install a treble bleed mod, then roll your volume back. You'll lose some output, but keep the clarity.
