Please excuse my ignorance, but when referring to tube/valve amps, what does class A or class AB etc mean?

I don't know a great deal but I BELIEVE that class A valve amps only have one valve to power the amp and A/B uses two or more?
Either way, you don't need to worry about different classes - it's very difficult to distinguish between the two in terms of sound. Knowing what class it is is mainly helpful for amp techs looking to modify the amp somehow.

As a general rule, it doesn't really matter.

But, technically, Class A is more inefficient and can give a slightly spongier, warmer sound, and every amp with one power tube has to be class A. The vast majority of other amps are Class AB, as you can have a push-pull poweramp with Class A but it generally creates a lot more heat and a lot less power. There's a lot of misconceptions about class, IE that the AC30 is Class A (it runs at a Class called AB1) but to a guitarist, all that really matters is sound, and seeing as the vast majority are all the same anyway....
