I know they are all pretty hard, but what is the easiest?

Forsaken, or hollow years. There are a lot of easy dream theater songs to play depends mostly on your skill level but a lot of their softer stuff is easy. Constant motion is easy, well except the solo.

Take a listen to the Falling Into Infinity album. Most of the songs' guitar parts are pretty simple, and some of DT's best material is on the album, though some of their worst material is on it as well.

Disappear is pretty easy if you can do the chord shapes. The electric parts are pretty simple too. Regression is easy enough too.
