Well, since I guess jazz guitarists wouldn't fit in on G3, my choice would be:
Joe Satriani, John Petrucci and Eric Johnson. (I know there has been a line-up like this, but it's really great)

And if jazz guitarists WERE invited, I would choose Pat Metheny, John Scofield and John McLaughlin to "rock" the stage ;]
