Black Label Society's cover of Lynyrd Skynyrd's "I Never Dreamed" is probably one of the best covers I've heard. As well as Gary Jules' cover of "Mad World."

Plus, Metallica's cover of Blitzkrieg's "Blitzkrieg", and Diamond Head's "Am I Evil?"
"Ultimate"-Guitar is the worst website on the internet. Polluted with unintelligent mongoloids.

Hendrix did All Along the Watchtower justice.

As much as it pains me to say it, but Killswitch Engage did a decent cover of Holy Diver.

Machine Head's version of Battery and Hallowed be thy Name were both very good.

Gary Jules' version of Mad World was fantastic, een though I preferred Tears For Fears' Techno original.

Yeah, at Rock in Rio, here's he link: http://uk.youtube.com/watch?v=y5MLY1mzNuE the sound quality is a bit off, but it's a decent cover. There's a stack of others on Youtube, so you might find a better sounding version.

FREDIT: I remember, Pantera's cover of Planet Caravan by Sabbath is brilliant, too.
