Alright the pit didn't really help me with this so can someone recommend me a good/well known song that has one guitar and a solo that is decent and challenging

try..
dying in your arms - trivium
or
windowpane - opeth

i love playing both of those, especially windowpane

depends on your skill level and taste in music. tons of bands have one guitarist

Nirvana, any of their songs with a solo
Lenny Kravitz, Are you gonna go my way
Eric Johnson, Cliffs of Dover, Manhattan
Radiohead, High and dry
NIN, anything with a solo
John Mayer, anything with a solo
Hendrix
Led Zeppelin

The "one guitar" thing sure eliminates a whole lot of your options. What do you have against bands with two guitarists?

O I have nothing against them, it's just that I'm in a band and I want to do a cover that has a somewhat recognizable/difficult solo and I'm tired of doing power chords over and over.

All along the watchtower by Hendrix would be cool. it has a bunch of solos and little fills in it

Canon Rock?

Seriously, don't. That thing drives me insane. My gran played Canon In D (the classical thing) and I almost teared her limb from limb.

Maybe Dazed And Confused by Led Zeppelin.

It's an incredible solo, one of my favorites - however, pearl jam had 2 guitarists....

Crazy Train. Anything Ozzy really. Try Led Zeppelin and Van Halen as well.

EDIT: Queen also has one guitarist. Their stuff is actually fairly challenging. Brain May is just godly.

Reel Big Fish
Rush
Streetlight Manifesto
