Would it be generally easy and beneficial for practicing purposes, and the extra breakup, to remove all but one power tube from my Peavey JSX head? Also, how would I go about doing this, and would I have to adjust anything on the amp afterwords?

ALSO, I've heard this is bad for the "headroom" needed for metal, which I play. Could someone verify, disprove, or even explain it?

You can't remove all but one. The power tubes need to stay in there in pairs.

^You actually can pull any number of power tubes. I wouldn't suggest it though- pulling two tubes might be ok, but generally there are better ways to get breakup at lower volumes.
You're not going to get any more breakup at "practice" volumes by pulling power tubes anyway. Just get an OD.
