How do these compare to regular pedals, and how exactly do you use them? I'm curious about this and this to be exact.
Guitars:
Epiphone Les Paul Special II [Heavily Modded]
Hand-Built Jem Copy
Rouge RA-100

Amps:
Crate VC-50
Epiphone Studio 10

Pedals:
DigiTech Bad Monkey
MXR 10 Band EQ
Boss Noise Suppressor
Electro-Harmonix Metal Muff w/ Top Boost

Well either one of those are going to be pretty horrible compared to regular pedals.

If you want a good rack FX unit, but a TC Electronics G-Major.

You use them by manually selecting effects with the buttons on the front, or you get a MIDI foot controller and program it to change effects when you step on different buttons.

I've had tube amps for a while now, but never actually had any go down on me

maybe you're not saying the right things? an amp likes to know you care.

Well those are just a basis to start from. I eventually want a huge EQ, Multi-Effects, and noise gate? Can you reccoment the best of those for a decent price. And where do I look to buy racks for this stuff?

well that first EQ you have linked is desinged for an entire band, not just a guitar. you would be better off with just a little eq pedal.

The G-major has a noise gate, an EQ (only 3 band parametric, but it is optimised for guitar) and awesome effects.

But if you need more EQ than that get an MXR 6 or 10 band pedal.
Fender 60W Super-Sonic Head
Fender 2x12 Cabinet (Vintage 30s)

+1 on the G-Major.

It's pretty much the industry standard for guitar multi-effects. Sure, there are other options our there, but for 399 new it's very hard to beat.
AMP:
5150 combo
GSP1101 + Tech 21 PE60

GUITARS:
ESP LTD M-255 w/ SD Full Shred
Kramer Vanguard w/ JE-1000 active preamp
Douglas WF-150sn w/ GFS "Hot Lead" set

Bos SD-1 (boost)
