I listened/played a lot of Jack Johnson and went from his easier songs to tougher ones. It really got me into acoustic, helped my bar chords, improved my overall skill and made many intermediate songs accessible.

Look at songs like Wasting Time and Do You Remember to begin with, then move up to stuff like Flake (for speed), Inaudible Melodies (for movement), Constellations (for minor soloing), and Taylor (because it's awesome).
