I was wondering if i could bypass the tone knobs on a guitar with emg's, and just have two volumes. If so, would i be able to use my old tone as a volume?

Simply put:

from:
1 volume
1 tone
3-way selector switch
EMG 81
EMG 85

to:
2 volumes (using the tone knob as a volume
gibson-style selector switch
EMG 81
EMG 85

Is it possible?

Don't see why not, just eliminate them from the diagram

It would sound like tone is on 10, because there's nothing to cut off the treble (which is what tone knobs do, basically)

If they're of an appropriate value, they can be used as volumes. Remove the capacitor, first.
