Sounds like you probably want a coil split, not a coil tap.

What is the difference?

Coil split only uses one of the coils from the humbucker. Coil tap just reduces the output from the pickup. Coil split gives a much more authentic single coil tone

What pot would you recommend me for this job?

500k audio taper.

btw, you can wire that for series/parallel instead of series/split.
the parallel connection gives you a bright tone because the inductance of the two coils in parallel is even lower than a single coil. and it's hum cancelling. split is not.

^ Tonight I will be changing my LP from switchable coil-split to switchable series/parallel. I am very excited to see how it sounds.
