Do you know of any? Trumpet, Violin ect.

the EHX POG is known for being able to pull off a 12 string guitar, bass, and organ.

Well sure, if he wants to play an orchestral piece through his guitar, but if he wants something that can do a few other more common instruments that involve octave tracking, the POG is superior.

What's a hexaphonic pickup? Is it the same thing as a midi pickup?

It's not really a pedal, but the e-bow might do.
