So i just broke my high E string while adjusting my action
will leaving that string off for a day or two until i get new strings affect the tension on the neck and throw my truss rod out of whack?

No, that only really happens if the neck has no tension on it and it's left for a bit.

What happens if you do this? I accidentally bought acoustic strings and didn't realize it til I took off the old ones
