If you are capable of that stuff Count William suggested then yes.

As I Lay Dying, try Confined, or The Sound Of Truth (not as metalcore, but still good).

Servant Ties by Haste The Day would be cool?

I dunno, just look around, surely you know the genre well?

Edit: Not really defining metalcore, but White Walls, Ants Of The Sky, Selkies: The Endless Obsession, or pretty much any song which is by Between The Buried And Me would be awesome, if pulled off well. (not likely, it's really complex stuff)

instead of doing metalcore songs. You should take a lame or popular song and metalcorelize it. Example, Baby Got Back-Throwdown, Mother-Bleeding Through, Sailin' On-Bad Brains, Stay Fly- Devil Wears Prada. there was this one band that did a hardcore version of Souljah boy that was really awesome. I always imagined doing Backstreet's Back hardcore style

if you're going to make a metalcore band make a 90's metalcore band or at least not genircore. As for covers do anything by converge, botch, scarlet, drowningman, cave-in, winter solstice, darkest hour, stuff like that. here are some songs i'd recommend.
