My band is looking to buy a really nice mixer to record our entire band, preferably a 16 channel mixer (16 mic inputs). I'm thinking Mackie, Behringer, Yamaha or anything else, whats your opinion?
My band has 2 guitar players, 1 Bass Player, and a drummer + 2 vocal mics

Honestly, i use a 16 channel mixer from yamaha and it works great to make a okay sounding demo. If you are really good at live mixing then i would suggest this, but if not then i suggest buying a presonus firepod or something similar. I use one of these as well and it sounds worlds better than doing it live. With the firepod you can record the full 8-piece drum kit and then overdub all of your other stuff. But on the matter of what mixer you should buy i would go with yamaha, i have never had a problem and cost me about 270 bucks...check it out.
