I have a Seymour Duncan pickup.
I want to mount it in an acoustic guitar (it's an electric pickup, but I'm just experimenting). I want it just to go to the input jack. I may even buy a volume pot.

Does anyone have any diagrams for the following:

1. Pickup -> jack
2. Pickup -> volume pot -> jack

Pictures would be appreciated, but I can do schematics as well. Thank you.
My gear:
-Epiphone Les Paul 100 (left-handed)
-Ibanez GRX20L (left-handed)
-Squire acoustic
-Epiphone Valve Junior Head Tube amp
-1x12 Cab

Which wires would be the hot and which would be the ground?

If I were to do the pickup-jack option, would I solder the red, white, and black wires together?

What exactly would I do?

Bare wires are always ground. If you have problems identifying the hot and ground wires, look at the SD website. For a volume pot, wire the hot from the pickup to lug 1 on the pot, the tip of the output jack to lug 2, and the sleeve of the output jack to lug 3, wire the ground from the pickup to the sleeve of the output jack as well.
