they can add a bit of ''bight'', thats partly why les pauls don't sound really muddy (the maple adds the high end to the very mid to low end mahogany)

so what if you compared a flattop lespaul with a maple cap and a all mahogany les paul which is curved?!?

Well now your dealing with two different woods, so the carved top would hardly make a difference.
