I love mellow acoustic music too.
Elliott Smith is amazing.
Best songwriter ever, IMO.
Its really sad music though.
Iron & Wine is great too.
Okkervil River has a lot of mellow songs, the best of which are in Black Sheep Boy.
The Mountain Goats are fucking awesome as well.
Very unique singing.
The older, more lofi stuff is the most mellow.
Cat Power is like the chick version of Elliott Smith.
Her older stuff though, her new stuff is kinda glammed up.

That album made me sad merely because it wasn't as awesome as some of their other work. If you're looking for mellow acoustic music, Curt Kirkwood did a cool acoustic solo album... But I'd still recommend Too High to Die, Up on the Son, and Huevos over anything else they ever did.

Elliott Smith's XO, Figure 8, and From a Basement on a Hill are all mellow. They have less acoustics than some of his previous efforts, but they all appeal to me more.

Nick Drake's Pink Moon album.

Anything Keller Williams ever did.
