I've never heard of the 321mhwk (mohawk!?), but the rg321m is made of mahogany, while the rg321 is made of basswood. Different woods = different sound.

RG321 is basswood, RG321MH is mahogany, RG321MHWK is mahogany in weathered black finish.

Basswood 321s haven't been made for years, so any 321 you'll find today will be mahogany anyways. WK is just a colour code.
