Dream Theater, Between the Buried and Me, August Burns Red, Tool, Dillinger Escape Plan, Into the Moat, Sikth. Just find a list of Mathcore bands and a list of Progressive Metal/Rock bands and you will find plenty of what you're looking for.

Some of Porcupine Tree's songs, The Mars Volta, Between the Buried and Me have a lot but it can turn into a mind**** if you don't like the music and as said before: Dream Theater.

anything by the dillinger escape plan, they roll dice to choose time signatures. and rx bandits are my favorite band and plenty of their songs switch up time sigs

Thrice uses odd time signatures without really overusing them, so you won't find a whole shiteload of odd time sigs in their music but when you do hear them it's always interesting.

Pretty much everything else I can think of has already been said. Actually, Protest the Hero.
