Most USB interfaces mix down after 2 inputs however USB is very capable of transferring 8 tracks without mixing down...it's just most companies program the software and build the hardware to mix down after you go above 2 inputs...(yea, im not sure why...)

If you do go USB be sure its a 2.0 USB device such as the EMU 0202 or 0404. If a product isnt specifically stated as USB 2.0 it is most likely a 1.1 unit.

Yamaha makes some great analog mixers and other gear however that mixer/interface will mix down to a single stereo output when tracking to the computer so yes you cannot edit one of the many mics you plug into it after recording.

For the price of that Yamaha unit you could also get something like the PreSonus FP10
