Is there a program that can automatically tab out (or use proper sheet music) a keyboard. The keyboard is midi compatible, and we have a MIDI to USB cable.

I'm sure there is, but it seems like it would cost you an arm and a leg. However, I could be wrong.

If you record it as a midi file, you can import it into Guitar pro and it'll tab it out for you

one of the best programs is reason

as it gives decent sounds and records what you play straight away and can quantize (put in time) parts for you

I use Sonar as my sequencer and it will map out everything in MIDI. It isnt that hard to do really. I also have an old version of Digital Performer which writes sheet music from MIDI output from my keyboard.
