I really like how in Pulp Fiction there are several stories that in the end overlap, making more sense of the others.
I have to read an American novel in English class,
and was hoping for something like that.
Any ideas?

A Scanner Darkly by Philip K. Dick. Then you can go watch the movie adaptation starring Keanu "The Plank" Reeves.

Fight club by Chuck Palanuik- stuff kinda reveals itself at the end but no mutiple storys, but still a great read ***** (5 stars)
