from scratch? takes a long time and is generally not worth the time.

BUT its super cheap to make with leftover stuff and if you're making tons of soup anyway..

get whatever leftover stuff from chickens like the bones, cartilage, skin, meat and chuck in a pot of cold water. heat it up VERY slowly (not even a boil otherwise it'll cloud and possibly taste bitter) chuck in with carrots, onions, celery.. and whatever seasonings you like.

all this is usually boiled (lightly.. shouldn't even be a simmer) down for about 5 or more hours.

thats more or less how you make a stock. more trouble than its usually worth, but its viable in restaurants where stock can be used for pretty much ANYTHING and any leftover chop can be thrown into the pot.

if you want it is as chicken soup base, reducing it down can make the flavour more concentrated.
