I have been looking for this on teh webz all day and can't seem to find a definitive answer.

I am trying to use either Cubase SX 3 or Acid Pro 6 to record while using Amplitube Metal as a VST plugin.

Is it possible to hear the Amplitube Metal effect while recording in real-time or do I have to record the clean guitar and then add the effect? It would be so much easier to hear it in real-time while recording.

I also have the issue of Acid Pro 6 crashing whenever I try to add the Amplitube Metal Plugin and try to record.

Try REAPER

Looked at the site. How is that going to be different than Acid or Cubase?

My main issue is hearing the VST effect in real-time.

reaper has the option to monitor effects while recording so it's basically what you are asking for
