I've heard people discuss how a particular amp might "break up" nicely,
what does this exactly mean?

it applies to tube amps

when you play it loud, the signal distorts and produces overdrive

'break up point' is when OD just kicks in, like half clean, half overdrive

Doesn't that happen to SS amps too? I've kinda never played an SS amp, but I've heard that they start to make some kind of distortion, but it doesn't sound as nice.

Yeah, digital sound distortion because the amp can't carry the load that well.

yea, tubes 'clip' the sound much nicer than SS amps

KoL use a "tube amp just breaking up" sound very often

Yeah, but it can sound similar. Really, it's the SS preamp clipping that produces the bad sound. SS preamps don't clip well. Tube Preamps provide harmonic distortion when they clip.
