Call of Ktulu by Metallica, it's rather simple if you ignore the solo. The problem is that it's played on three guitars, so you'll have to pick and chose which parts you play.

Try Bladecatcher by Mastodon. No complex, shred solos or crazy time changes, its relatively straight-forward for a prog-metal instrumental song really.
