I understand keys entirely in instruments like brass and woodwind and piano, and normally I can judge by ear what key it's in, however my knowledge in those fields seems moot with guitar and bass, so I have a few questions.
How can I train my ear better with guitar for the key of a song?
What key is In the Sun by Joseph Arthur in?
and finally, if I don't use a capo and play the song using standard chords, what key is it in?

Keys are keys - it doesn't matter what instrument it is, you still have the same notes, the same intervals and the same scale and chord structures.
